8 Tbsp salted butter
½ c. sugar
¼ c. light brown sugar
1 tsp vanilla
1 large egg
1 ½ c. All purpose flour
½ tsp baking soda
½ tsp salt
¾ c. semisweet chocolate chips
Beat together the butter and sugar until creamy. Add the vanilla and egg and beat on low speed until just incorporated,10-15 seconds or so (If you beat the eggs for too long the cookies will be stiff). Add flour, baking soda and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball that is easy to handle.
At this point add chocolate chips. I dumped mine into my mixer or you can use your hands to turn them into your dough. Make into dough balls and cook until golden brown. Do not over bake.
