This can make a lot of soup or a little depending on how many zucchinis you put in your pot at the beginning of this process. This is one of my favorite meals my mom made for our family when I was a child. Honestly, I wish that zucchini season was much longer than it is so I could make more of this soup!

Zucchini Bisque

This can make a lot of soup or a little depending on how many zucchinis you put in your pot at the beginning of this process. This is one of my favorite meals my mom made for our family when I was a child. Honestly, I wish that zucchini season was much longer than it is so I could make more of this soup!

6 zucchini

2 c. onions

chicken broth

3 c. half n half

½ tsp pepper

½ tsp salt

½ tsp nutmeg

cayenne - as dash

Fill your pot with chicken broth just past your chopped zucchini and onion. Cook on medium high until the zucchini is tender and pull from the stove. Scoop the zucchini and onion out of the pot and put in a blender. Mix well and pour into a big bowl until everything in the pot has been blended. I use a little of the chicken broth in the blender but leave a majority of it in the pot, you can save the remaining chicken broth in a jar in the fridge or discard in the sink. Once all of your zucchini and onions have been blended add it back to your pot  on medium/low heat on your stove. This is where you will add the half n half, pepper, salt, nutmeg and a dash of cayenne. Once everything is mixed it is ready to eat. We like to add shredded cheese to the top and then eat.
