2 c. flour
2 tsp baking powder
3 tsp cinnamon
½ tsp salt
¼ tsp nutmeg
2 eggs
1 c. homemade sour dough starter
1 ½ c. ripe bananas
¼ c. melted butter
¼ c. coconut oil
½ c. sugar
¼ c. brown sugar
2 tsp vanilla extract
¼ c. brown sugar
¼ c. white sugar
¼ cup plus 1 Tbsp flour
2 Tbsp butter
1 Tbsp cinnamon
Streusel topping:
¼ cup brown sugar
¼ cup white sugar
¼ cup flour, plus 1Tbsp.
2 Tbsp. melted butter
1 Tbsp. cinnamon
Preheat oven to 400°F. Line muffin tin with liners or spray with non-stick baking spray.
In a large bowl, whisk together flour, baking powder, cinnamon, salt, and nutmeg.
In a medium to large bowl, whisk eggs until mixed. Add in sourdough starter, bananas, butter, coconut oil, sugars, and vanilla. Whisk until well combined.
Add wet mixture to the flour mixture and fold, scraping bottom and sides using a rubber spatula, until just mixed. Do not overmix.
Divide batter evenly between muffin tins and top with some of the streusel. Place into the oven and bake for 17-19 minutes, until a toothpick comes out clean. Cool for 15 minutes, then transfer to a rack and cool completely.
