4 chicken breast
1 jar salsa
1 container sour cream
3 cups flour
1 Tbsp baking powder
2 tsp salt
½ cup butter
1 cup water
1 can (family size) refried beans
1 cup milk
4 cups shredded cheddar cheese
Add chicken breasts to an Insta pot, add in Mexican seasoning, Onions, Garlic, and a half to ¾ jar of Salsa. Cover in water. Seal the pot and push the poultry button and let cook. Once it is done cooking, pull out chicken and shred with two forks. Add back into tomato sauce and mix.
In a pot add one family size can of refried beans, add in a cup of milk and some shredded cheddar cheese. Cook over medium until combined and warm.
Homemade tortillas:
Take 3 cups of flour, add in 1 tablespoon of baking powder, and 2 teaspoons of salt, combine. Melt ½ cup of butter and add to 1 cup of water and mix with dry ingredients. Knead until the dough is smooth. cover with plastic for 10-15 minutes. Divide into even golf ball sized balls of dough. Cover with plastic and let rest for another 10 minutes.
Spread out the dough with a rolling pin into circle shapes. Cook on a skillet or frying pan until it starts to brown. Cook both sides.
Layer ingredients on your homemade tortillas and eat.
