¼ c. peaches
1 can Ro*Tel Chipotle Tomatoes and Chiles
¼ c. diced red onion
¼ c. red bell pepper
2 Tbsp cilantro
lime juice
¾ tsp salt
4, 6 oz pork chops
Stir together peaches, drained tomatoes, onion, bell pepper, cilantro, lime juice and salt in a bowl.
Season the pork chops and grill 8 to 10 minutes. Let the pork chops rest for 5 minutes before adding the peach salsa. This is a very delicious and light meal, perfect for a fresh off the grill and garden fresh taste.
