2 tsp olive oil
1 ½ lbs Italian sausage
3 c. chopped onion
4 cloves chopped garlic
2 tsp dried oregano
2 Tbsp tomato paste
1 can, 28 oz, diced tomato fire roasted
6 c. chicken stock
8 oz mafalda or fusilli pasta
½ c. chopped fresh basil leaves
salt to taste
pepper to taste
1 c. heaping ricotta cheese
½ c. grated parmesan cheese
¼ tsp salt
pepper - dash
2 c. shredded mozzarella cheese
Sauté olive oil, onions, and garlic in the bottom of a big pot.
Add oregano, tomato paste, roasted diced tomatoes, bay leaves, chicken stock, basil leaves, salt and pepper to the pot and bring to a boil and then simmer.
In a separate pot cook pasta al dente.
Add pasta to soup pot and top it off with the cheesy yumminess!!!
