1 Tbsp Olive oil
6 celery stalks
1 medium finely chopped yellow onion
3 cups frozen corn
6 to 8 hotdogs
2 cans, 10 oz diced tomatoes with green chilies
1 tsp chili powder
1 tsp ground cumin
1 can (15.5 oz) black beans
salt & pepper to taste
Olive oil spray
2 boxes - Cornbread mix
Instructions:
In a pan saute in olive oil, celery, onion, frozen corn, and hotdogs.
Add diced tomatoes, chili powder, cumin, black beans, salt & pepper. Once combined together pour into a casserole dish.
In separate bowl mix together corn bread mixture following the instructions on the box.
Pour cornbread mixture over the top of the hotdog mixture and bake in the oven for 20 to 30 minutes at 350 degrees.
