1 whole chicken, cut into 8 pieces
2 medium onions sliced yellow onion
10 cups water
1 ½ c. diced carrots
1 ½ c. celery diced
1 pkg (12 oz.) egg noodles
2 Tbsp soy sauce
salt & pepper to taste
Put the chicken onions and water into a pot on medium high and bring to a boil, then turn down to a simmer for at least an hour but a couple hours is better.
Take out the chicken and remove the skin from the chicken and the pot(sometimes it comes off while cooking). Then remove the meat from the bones and put back into the pot. Add the chicken, carrots and celery and let simmer until the veggies are cooked al dente.
Add the noodles and soy sauce, season with salt and pepper to taste, I like fresh ground black pepper!
Cook until the noodles are al dente then turn off the heat, they will cook some after the burner is turned off.
Serve with buttered bread or crackers!!
