⅔ c. sugar
1 large egg
½ c. olive oil
1 tsp vanilla
1 ¼ c. flour
1 tsp baking powder
¼ tsp kosher salt
½ c. sour cream
blueberries to taste
⅓ c. whole milk
In a mixer add sugar, flour, baking powder, salt and stir together on a low setting until all the dry ingredients are combined. Add wet ingredients... egg, olive oil, vanilla, whole milk, sour cream and mix on a medium low setting until mixed together. Drop in blueberries in batter. We like our muffins backed with blueberries. We added 1 ½ cups and stirred in.
Bake in the oven at 250 for 20 to 25 minutes or until tops are golden brown. If you're using the large muffin tins this recipe makes 6 big muffins.
