Baked Potato Bar Night

1 per person - Russet Potatoes

1 container - foil

2 cans chili

1 to 2 cans, 10 oz diced tomatoes with green chilies

2 c. shredded cheddar cheese

1 pkg cooked til crisp bacon bits

¼ c. chopped fresh chives

1 container sour cream

Potatoes: Wash, dry, place on foil squares and sprinkle olive oil on potato skin. Add salt and pepper to the potatoes and wrap in foil. Place on a baking sheet and into oven or on your grill at 375 degrees for 1 hour or until cooked through. You can tell when they are done when a fork goes through potato easily.

Chili: in a pot pour cans of chili and diced tomatoes (optional) and stir well.  Warm on medium low heat until at liked temperature.

Cheese: grate and place in a bowl

Bacon: We cook ours in the microwave on a bacon cooker Ryan's dad gave us years ago. I'll put a link to the cooker below. We like to cook ours in the microwave until crisp and cut into bits.

Chives: cut up as much as your family will use. This adds a yummy taste to your meal and a pretty color to your plate.

Sour Cream: Place the container with all the other ingredients and a spoon in it ready for placing your dollop of sour cream on top.

Sprinkle a dash of salt and pepper and voila you have a  yummy meal. We also have salt and pepper shakers that we love. I will place a link below for them as well.
